New Label from Santo Wines: Thira Kori 2023
Santo Wines has released its latest creation, Thira Kori 2023, a dry white wine made from 100% Assyrtiko, grown exclusively on the island of Thirasia. Named after the daughter of King Thiras, the island serves as the heart of this label, showcasing the complexity and distinctive mineral character of the local terroir.
The grapes come from Assyrtiko vines, averaging 100 years old, cultivated traditionally in kouloura (basket) shapes. The vineyards, situated at altitudes of 30–150 meters, thrive on volcanic soil, contributing to the wine’s unique profile.
The winemaking process follows classic white vinification techniques, including destemming and a 6-hour skin contact at a low temperature of 5–6°C. Fermentation occurs under controlled temperatures of 16–17°C. The wine matures for at least 12 months in clay amphorae, remaining in contact with fine lees, which adds complexity and depth.
With a limited production of only 4,000 bottles, Thira Kori 2023 is ideal for vegetarians and vegans, offering a taste of Thirasia’s rich winemaking heritage.
